When my dear friend, Steve Strompolos, first approached me with his idea to create a superior salad dressing (born of family tradition), I thought, “Hmm…” Then, after researching online the hundreds of dressings available at Whole Foods, other stores and many organic-based products, I was dumbfounded.
The discovery was this: As consumers, we do not have available to us not even one pure 100 percent olive oil dressing made with no other oil fillers. Why is this a big deal? Because all other dressings in the market are “watered” down with soy, canola or corn oils. GMOs are used in 92 percent of all soy based products, 85 percent of all corn products and 100 percent of canola-based products. (Please never consume canola!) Mr. Strompolos’ dressings contain 100 percent pure olive oil imported from Greece – no GMOs used whatsoever!
Next, most substandard oils are filtered or cleaned up with hexane- or petroleum-based products, which also lighten the color of the oil — another nutritional yuk! And the flavor of each of his three dressings is unbelievably delicious. I use only his herb mixture in all my cooking, not only for my loved ones, but for my clients as well. Sea salt is loaded with iodine; anyone who sits in front of a computer needs iodine to protect their thyroid, and these days, that’s our kids to our grandparents.
As consumers concerned about our well-being, it’s time for all of us to scrutinize what we’re being sold and say “no” to products that are questionable or confusing.
