Morel Hunting in Galena

We found our first one – almost like a needle in a haystack.

Visiting Galena is a pleasure year round but late Spring, during Morel season, is my favorite. Just about three hours outside of Chicago, the Galena Territory is about 6,000 acres of gorgeous land with pristine woodlands and prairies, several championship golf courses, and many activities from boating to horseback riding.

Eagle Ridge Resort is about five miles out of town and transforms the typically homey, casual trip into a luxury escape. The Stonedrift Spa offers a range of services in an eco-friendly setting and the main Woodstone Restaurant features local ingredients from produce to the entrees. The kitchen staff searches high and low for the freshest ingredients and the preparations are top notch, as you can see in the gallery here.

As a guest for this Morel hunt, I was treated to especially creative dishes such as Bluegill with spring peas, cattails and lemon balm and an amazing Iowa pork chop with heirloom carrots, wild asparagus sided by pheasant-black mushroom potatoes.
