As the final days of summer approach, a ‘beerita’ is the perfect way to say adios to warm weather.

Local mixologists are taking tequila to another level adding an unusual ingredient – beer. ¡Ay Chiwowa! – a Mexican-themed Gold Coast restaurant – serves over 80 different kinds of tequila, and one interesting tequila-laden cocktail on the menu is Billy’s Beerita. It’s a new spin on an old favorite comprised of lime, agave and Grand Marnier, topped with Coronita beer and the star ingredient – Cien Años Blanco tequila.

So how did the folks at ¡Ay Chiwowa! decide to add beer to a margarita? “When I was at Harvard Business School, I’d hit this Mexican joint where someone told me to combine the two as a joke if I couldn’t decide between a margarita and a beer,” explains co-owner Billy Dec. “My business partner Arturo Gomez, who heads up the mixology programs at all our venues, was familiar with adding beers to cocktails. So I asked if he could make something, and he took it to the highest levels of quality and presentation.”

Mr. Gomez explains that he uses Cien Años Blanco because “we wanted to use a quality blanco with a lot of depth and flavor that still comes at a great price point. While guests can request a substitute tequila that they prefer, we encourage them to give Cien Años Blanco a shot, as we have a ‘method to our madness.’” We couldn’t resist trying this cocktail on a girls’ night out and you know what? There is a method to their madness – and it works.
