People who know I spent last year living in France often ask if I miss being there – and if so, what I miss about it. While Chicago’s a world-class city with some of the best cuisine on the planet, I do miss dining at charming bistros, brasseries and restaurants in Paris. And one of the best is Spring, an acclaimed spot mere blocks from the world-famous Louvre. What makes Spring most special is the fact its über-talented chef-owner Daniel Rose isn’t French at all, but hails from Wilmette.
Last year, I wrote a Chicago Sun-Times Food cover story about Spring and Chef Rose’s spreading international fame. In fact, May 2012’s Bon Appétit Magazine pronounced Spring – his second solo spot – among “The New Standards: Nine of Our Favorite Restaurants in Paris.”
The couple meals I had at Spring while researching the Sun-Times article were among the best I’ve had anywhere in the world, thanks to Rose and his multi-national culinary team. With frequently changing menus that feature only the freshest seasonal and locally sourced ingredients, Spring is worth the splurge, whether you’re a Parisian or visitor from the other side of the globe.
And now, Chef Rose has penned his first book available in both English and French. For the simply titled Spring Book, the 30-something chef not only wrote recipes with French food and wine journalist, photographer and food stylist Sophie Brissaud, but also penned a few short stories for the 112-page tome. And Chef Rose’s charming pencil sketches add vivre to the recipes, which, not surprisingly, are based around the seasons.
Those lucky enough to be strolling the streets of Paris can pick up a copy at Spring itself, at Librairie Gourmande (a bookstore on rue Montmartre in Paris’ 2nd arrondisement) and Colette, a stylish boutique not far from Chef Rose’s restaurant. The rest of us will have to settle for getting the printed-in-France book shipped to us in the States. Books are 29 euros (about $39), plus 10 euros ($13.50) for shipping and handling. Copies signed by Chef Rose himself also are available by request.
